Thanksgiving Recipe from The Lodge

For Bethlehem, PA, residents, The Lodge is friendly café that serves great food—the Cuban sandwiches are a local hit—and offers free live music. With the motto Friends Celebrate Greatness in Self and Others, The Lodge is much more to the people who work there. And to the ITE/MH Campaign it is a thriving example of the Evidence in the Lehigh Valley.

Resources for Human Development  runs the Mental Health Recovery Lodge of Northampton County—known simply as The Lodge— to provide supports and a high quality of living for people with mental illness. Lodge members live independently in community-based supportive housing and work at the Café at the Lodge, where they learn vocational skills, participate in educational programs, and support each other. Proceeds from the café help offset the program’s costs.

To showcase this incredible place and the talented skills behind the Café at the Lodge, we asked them to to share a Thanksgiving dish that we can pass along to you. Enjoy this Apple Cranberry Relish—and when your guests rave, be sure to tell them about The Lodge.

Apple Cranberries Chutney

1 Bag Fresh Cranberries
1lb. Pears chopped
1lb. Apples (Granny Smith best) chopped
1 chopped Onion
3 cups Brown Sugar
½ cup Golden Raisins
Zest & Juice from 1 Orange and Lemon
1 cup Apple juice or Apple Cider
1/2 cup Cider Vinegar
1tsp Nutmeg
1 tsp. Allspice
1 tsp. Cumin
1 tsp. Salt
1 tsp Ginger
½ tsp Clove
¼ tsp Cayenne Pepper

 

Put all ingredients in Pot and bring to a boil.

Reduce heat and simmer, stirring constantly, till slightly thickened and syrupy—approximately 45 min- 1hr.

Best made a day or two ahead of time.

Can be served cold or warm!! ** Also makes for a Good Pork Sauce!!!***
